These seminars are packed with information from beginning to end! We provide the laptops so you can take the reins and ride through menu planning!  By the end of the workshop each student will be able to create popular and healthy menu choices that meet dietary guidelines under food based and Nutrient Standard Menu Planning (NSMP) regulations. Course Description:
Day 1—Introduction to the program basics including ingredient and recipe entry. Building recipes and creating menus for nutrient analysis.
 
 
Course Agenda:
  • Tools to ensure you are meeting the new federal regulations
  • Review latest ingredients and recipes included in the USDA CN database
  • The in's and out's of ingredients
  • Add and Modify recipes
  • Menu entry in a calendar format
  • Conduct a weekly nutrient analysis

Course Description:
Day 2—Take your knowledge to the next level. Topics include: advanced recipe functions, yield factor, cycle menu entry, production records and more.
 
 
Course Agenda:
  • Tools to ensure you are meeting the new federal regulations
  • Advanced recipe topics include standardized theme bars, shortcut (variety) recipes, sub-recipes, batch quantities and yield factor method
  • Copying menus and creating cycle menus
  • Analyze and modify menus to meet dietary guidelines
  • Creating Daily Production Records
